Southern Cooking - Cornbread Stuffing

Whenever I think about Thanksgiving the one dish that epitomizes the South is cornbread stuffing (or dressing as we called it).  I never really knew that any other kind of stuffing existed....except that stuff in the box that no one I knew had ever purchased.

We never put the stuffing in the actual turkey....not sure why though I was always glad because it honestly grosses me out a bit.  Oh and dressing isn't just for Thanksgiving....we also had it for Christmas and occasionally as an everyday treat with chicken or ham chopped up in it as a main dish.

Before you make stuffing....you have to make cornbread.  Now this is confession time.  I use "cornbread mix" that I bring back from Alabama in my suitcase.


Since you can pretty much only find this in the Southern US & I'm sure most of you would NOT be willing to drag 5 lbs of cornmeal back in your suitcase....Pioneer Woman to the rescue.  She published a recipe here.  You can also use your favorite recipe but make sure it has NO SUGAR!  Stuffing is supposed to be savory not sweet.  

Also....the key to cooking cornbread is cooking it in a cast iron skillet.  Whatever oil the recipe calls for, pour it in the skillet and then put the skillet in the oven during preheat.  When the oven is heated, carefully take out the pan, pour the oil into the mix & quickly stir it.  Then pour the mix back in the pan and into the oven it goes.  This insures a brown & crispy crust.  Yum!

Now on to the Stuffing:

Cornbread Stuffing:

2 X 9" skillets of cornbread, cooled & crumbled
1 medium onion, chopped fine
4 stalks celery, chopped fine
2 Tbsp butter
2 cans condensed Cream of Chicken Soup
2 eggs
1 Litre (or quart) of Chicken Broth
2-3 Tbsp sage (to taste)
Salt & Pepper (to taste)

Preaheat oven to 350 degrees.

Melt butter in a frying pan.  Cook onions and celery until soft and starting to brown.

Crumble cornbread into a large bowl.  Add cooked onions & celery.  Add condensed soup and eggs.  Stir.  Add enough chicken broth to moisten it to a mud like consistency (I know, I know....I'm trying to be descriptive but it totally depends on how dry your cornbread is).  Add seasonings to taste. 

Pour into a buttered 9X13 baking dish.  Bake for 45 minutes or until middle is set and top is starting to brown.  Serve with turkey, gravy and cranberry sauce.  Yum!


My stuffing got pushed to the last minute on Saturday so it was still in the oven when all the photos were taken.  Not ONE photo.  Doh!

I know I promised recipes but I have been taken out at the knees by the plague......


Okay...not the real plague but a killer cold that had me sneezing 10 times in a row! I feel like my brain has been removed and replaces with snot.  Gross I know!  Poor Evan is heart broken because he is SURE that I am the ONLY one that can put him to bed.  Dewey is none too impressed with Evan's lack of love for him these days.

On a happier note....I am LOVING my new iPod Touch Gen 4.  It has a built in camera so I've been snapping pictures all over the place.  Here's a few examples:

That's how I felt last night after a wonderful late Thanksgiving dinner with family and friends.

Happy Late American Thanksgiving!

As most of you know, though I live in Calgary now I am originally from the US.  I used to make the trek back to Alabama for Thanksgiving every year but traveling during Thanksgiving is just too much!  This year Thanksgiving came and went without much ado  Dewey and I were both working crazy hours all week so we barely had time to breathe much less think about Thanksgiving.


Thankfully, I did think about it enough to buy a turkey!  Today we're having friends over to celebrate.  I'm trying my hand at cooking a big turkey dinner.  Yum!  I will definitely blog about everything I make over then next week or so.......

What's Cooking Wednesday - Peanut Butter Chocolate Chip Cookies

I haven't been baking which is leading to mutinous rumblings around the house.  I decided to bake cookies for Evan and I wanted to try something different.  Peanut butter and chocolate are one of my favorite combos so trying this recipe was a no-brainer!

Soft Peanut Butter Chocolate Chip Cookies
Adapted from About.com

3/4 cup all purpose flour
3/4 cup whole wheat flour
1 tsp baking soda
1/2 tsp salt
1/2 cup butter
1/2 cup peanut butter
3/4 cup brown sugar, packed
1/4 cup granulated sugar
1 egg
1 egg yolk
2 tsps vanilla extract
1 1/2 cups chocolate chips

Preheat oven to 375°F.  Line baking sheet with parchment paper.

Combine flours, baking soda and salt.

Cream butter and peanut butter together until smooth.  Add sugars and mix well.  Mix in egg, egg yolk and vanilla.  Fold in flour mixture until well mixed.  Fold in chocolate chips.

Drop by tablespoonfuls onto parchment paper lined cookie sheet.  Bake for 8 to 10 minutes or until starting to brown around the edges.

Recipe Notes:  These cookies were tasty but mine were NOT soft and chewy.  They were crispy from the get go and just got crispier.  Evan and Dewey were big fans but these cookies left me "meh".  Definitely worth a try if you like peanut butter & chocolate.

Friday Favorites - November 19th

Happy Friday!  My week was hellish with a capital H!  Thankfully it is over and it was pretty successful.  I am looking forward to a long relaxing weekend before it all starts again next week!

Until then....here are some things that are making me happy this week:

Coffee! Too much to do....too many late nights.....too many early mornings means ME NEED COFFEE!!!!!

My favorites are Non-fat Caramel Macchiato and 1/2 sweet Skinny Vanilla Lattee! 

And don't forget....at Starbucks it's buy one get one free for holiday drinks from 2-5pm until November 21st!  Yum!

Bare Escentuals Buxom Lipgloss is awesome.  It has "plumping" effect so it's nice and tingly. I don't find it as sticky as other glosses and the colors are great.  It also makes a great stocking stuffer!

Okay...any guys reading this...avert your eyes!

Ok girls...if you are a little heavy in the "girls" department....this bra is for you! I have a hard time finding good sports bras because I am thin with big boobs.  Generally sports bras aren't made that way.  They size for big boobs must mean big around.  Enter Lululemon and their TaTa Tamer.  AWESOME!


It comes in real sizes and hooks in the back like a regular bra.  Definitely check them out!

Roasted Sausages, Peppers and Potatoes

Looking for an inexpensive, tasty winter meal?  So was I!

One of my favorite blogs for recipes is Sweetnicks.  When I saw her recipe for Roasted Sausages & Peppers, I thought....gotta try that soon!




Roasted Sausages, Peppers and Potatoes
Adapted from Sweetnicks


1 package Mild Italian Turkey Sausages (raw) such as Tailgaters, chopped into 1 inch pieces
3 medium onions, cut into 1-inch chunks
3 bell peppers cut into 1-inch pieces
3 medium potatoes cut into 3/4-inch pieces
1/2 cup balsamic vinegar
2 Tbsp water

Preheat oven to 425 degrees.  Mix sausage, onions, peppers and potatoes in a large baking dish (9X13 or larger) sprayed with cooking spray.  Pour balsamic vinegar over the mixture and stir.  Bake until the potatoes are tender and starting to brown and the sausage is done through.  This can take from 45 minutes up to 1 hour + depending on pan size.  Remove pan from the oven and add 2 Tbsp water.  Wait a few minutes and then stir while scraping the browned bits.  Pile into toasted rolls if desired.

Recipe Notes:  I used a 9X13 pan and it was so full that the cooking time was LONG.  I ended up separating it into two pans so that it would cook faster.  I cut the balsamic back in the recipe above b/c I found the original Sweetnicks recipe to vinegary.  We thought this recipe was really tasty and easy.  I want to make it again and switch up the veggies in it.  Maybe add chickpeas.  Definitely worth a try and it is a very inexpensive recipe.

After a trip to Wal-Mart where I threatened to sell Evan to the highest bidder.....I had all my stuff to pack my 2 shoeboxes for Operation Christmas Child.



After I packed them they were so full......


That I went to the dollar store & spent $20 more......


and stuffed 4 boxes instead of 2!


Ready to go....  How cool is that?  Remember....it's only Tuesday so you still have the rest of the week to get those shoeboxes packed!

A special shipment of shoe boxes is being sent to Haiti this year and all boxes backed online will be included.
South America: Chile / Paraguay / Uruguay / Venezuela
West Africa: Cote d'Ivoire / Equatorial Guinea / Guinea Bissau / Senegal / Sierra Leone



So on with the list.....



  1. You can bring a smile to a child's face this Christmas!

Meal Planning - Getting back on the Wagon

The last few weeks have NOT been conducive to meal planning.  With after work meetings, Dewey's band practice & Evan's pneumonia it has been a bit of a zoo.  Unfortunately, no meal plan equates to unhealthy eating more often than not.  So back on the wagon we go!

Saturday - Breakfast: Fluffy Pancakes with chicken sausages Supper: Roasted Sausage and Peppers
Sunday Easy Crockpot Pork Carnitas with tortillas/avacado/etc. Might pair with Spanish Rice
Monday - Leftovers
Tuesday -Spiced Honey Lemon Chicken with Mango Salsa tho I am going to cheat and use this nummy Mango salsa I bought at Costco.
Wednesday - Leftovers
Thursday - Chili leftovers from the freezer
Friday - Crockpot Pulled Chicken sandwiches.

Now off to compose my shopping list!

Friday Favorites!

I'm back after an overnight in Banff.  It was cold & snowy but the meeting went great and it's always good to bond with coworkers!  Since I haven't been home there aren't many new pics to blog so instead here are a few "favorite things" that I want to share with you!



What are these little, colorful bundles of greatness?


They're foldable shopping bags from Old Navy.  I found these in the bins of last minute items that Old Navy puts right before the check out.  They were $5.  The colors are fun and since they fold up you can stick the bags in your purse for use any time.  The straps are also long enough to go over your shoulder.  Long story short....my favorite reusable shopping bag EVER.  I use them all the time where with other bags I ALWAYS forgot them at home/in the car.  

These would make great stocking stuffers.


Today I received a box in the mail with a cute little elephant on it.


What could it be....hmmmm....tinyprints?  I think it's......


our Christmas cards!  They arrived prior to the earliest estimated delivery date, I got them on sale and....oh yeah.....they look amazing!  I am so excited to start addressing envelopes and dropping these in the mail.  If you are doing photo cards definitely check out Tiny Prints.  We have been VERY happy with our cards the last two years. (No Tiny Prints did not ask me to say this....I doubt seriously that they know I'm alive. )

Top Ten Tuesday - Ten Ways I Never feel like I Measure Up

Yesterday, someone on Twitter pointed me toward this amazing blog about body image called In This Skin (at The Southern Fairytale).  It got me thinking about all the ways we measure ourselves....compare ourselves....berate ourselves about our perceived being.  I call it death by a thousand 'ers.....we should be thinner...prettier....nicer....

Here are the Top 10 Ways that we (or at least I) make ourselves crazy with negative self talk.....

  1. I need to be thinner. Admit it....you've said this.  I swear we've ALL said it at one time or another.  Funny thing is that later we will look back on those days and say "Wow....I never knew I looked that good!"
  2. I need to be nicer.  Maybe....says who?  And what does "nicer" actually mean?  If it means putting yourself last to meet the needs/wants of others....I say "no way!"
  3. I need to be more patient.  Okay...this one has a point but rarely does telling yourself that you need to be more patient help.  You have to work on it in the moments where your patience isn't being tried.
  4. I need to focus on my child/children more.  Another one with definite merit BUT you can't put this as your number one focus and let your self fall by the wayside.  You need to focus on your own well being/health/etc to be there for your children!
  5. I need to be a stay at home mom.  This is a hard one for me. Lots of my friends are stay at home moms & I read lots and lots of blogs from SAHMs.  On one had I wonder/worry if Evan is missing out b/c I work but on the other hand I'm not sure I would be a great stay at home mom.
  6. I need to make sure my family eats healthier.  This one is a true statement.  I think the issue I have with it is that I never acknowledge that I already do a lot to make us healthier.  Is there room for improvement?  Sure! 
  7. My house isn't as nice/as decorated/as ______ as so&so's house.  I do this all the time right before having people over. One of my main reasons is b/c we have cat scratched furniture in our living room.  Funny though....no one has ever said "We're never coming back to your house b/c of that craptastic furniture of yours!" so why do I worry about this?????
  8. My house isn't tidy/clean/spotless enough.  This one only bothers me when I'm already stressed about something else.....then....watch out!  And there are truly soooooo many things that are way more important than how clean your house is!
  9. I'm not sure I'm doing what I am "meant" to do.  I think about this one a lot.  I don't think it is negative most of the time because it makes me think about what I really want out of life.  The problem comes when I tell myself this but refuse to make changes to influence change.
  10. Did I mention I'm not thin enough?  Just joking......  :)
So is it just me?  What does the little voice inside your head drive you crazy about?  I would really love to know!!!

Photo Weekend in Review - November 5-7, 2010

It's been a busy weekend around here.  I did quite a bit of shopping & even started my Christmas shopping.  Yay!


New, super-cool metal sculpture that I bought at Twisted Goods in Market Mall.  It is now residing on the wall at the top of our stairs that go to the 2nd floor.  It looks awesome but I kind of feel bad b/c such an awesome piece needs a home where everyone can see it.  I bought some other stuff there too but I can't show you b/c they're presents.  :)


Today I went to Make It Calgary with Rea (@ReaFacetoFace), Jon (@JoninCalgary),  Heather (@Starbuckly) and Matilda (Heather's baby daughter).  We had a great time & decided to walk to China Town for lunch.


The Calgary Bow building.  It is going to be soooo cool when it's done!


Rea brought along her "Mount Royal roaming gnome".  He really enjoyed dim sum.


It was a beautiful day in Calgary.

I bought an Usborne Christmas craft book today. I made the mistake of showing it to Evan.  He insisted that we do a craft "NOW!" and then made me do most of it.

Christmas Time is Coming!!!!!

I know, I know, it's still November but thanks to Shan and her mention of the 25 Days of Christmas Challenge I am now officially in the Christmas spirit!  I will be figuring out 25 days of activities for my little family to do starting Dec 1.  Stay tuned for "all Christmas all the Time" once December 1 hits.  You have been warned.  :)

This year I would like to do things a bit differently though.  I want to focus on "doing" and "giving" instead of "getting".  I have no delusions that we won't have a big case of the "gimmes" around here since Evan is 3 and all.  We get a small dose of that each and every morning watching YTV.  "I want that.  Can I have that?  I want that!"

Some ideas I've come up with to focus on "doing" and "giving" are:


  • Make cookies and then deliver to the neighbors as holiday gifts.
  • Make gifts for Evan's preschool teachers.
  • Pack a Christmas box for Samaritan's purse (tho do this one soon b/c it ends in mid Nov). You can even "pack" one online this year.
  • Give out charitable gift certificates in addition or instead of gifts.  Kiva, WorldVision, etc all have ways to do this.
  • Adopt a family through Angel Tree or other organizations.  
  • Volunteer to make cards/presents or even better....visit....local nursing homes/lodges.
There are so many great ways to get involved & to show your children that Christmas isn't just about getting.

Knowing Me, Knowing You - November 2010 Edition

It's that time again....time to learn a bit about me since I spend most of my time talking about my fam.  Knowing Me, Knowing You is hosted by the lovely Fairy Blogmother.

1.  Last month I asked if you had started your Christmas shopping yet, this month I'm curious as to what's on your Christmas wish list.


Hmmmm.....  What is on my wish list this year?????  Well there are always gift cards.  We're getting an Anthropologie here in Calgary in November so I would love a gift card for there.  It's kind of expensive but I love the clothes.  Here's the dress I bought to wear to the New Year's Eve party we're going to.


Another gift card I would love is Lululemon.  I am usually WAY too cheap to buy anything from there but after sticking with bootcamp for a few months I treated myself to a new workout outfit.  Love it!

I would also like a new iPod Touch 4th Generation.  Who am I kidding....I really want an iPhone but the 4th Gen iPod is as close as it gets without having to sign up for phone service.  Plus it has a sweet built in camera!

2.  Do you have a hand held video game in your house?  

Yep! We have 2 Nintendo DSs, 2 iPod Touches and a Leapster (Evan calls it a Weepster).  The iPods get the most use.  Will and Nicole used to play the Nintendos all the time but they each have iPod Touches now so they don't get much use.  We are such a techie/gadgety household!

3.  Are you going to participate in the 25 Days of Christmas Challenge?

I have forgotten every year until it was too late.  Thanks, Shan, for asking this question and reminding me!!!!  I am going to get to work now on my 25 days of Christmas fun.  Evan will also have a Playmobil  Advent calendar to open.

4.  What is your favorite kind of cookie?

Not sure I've ever met a cookie I didn't like.  I love chocolate chip cookies.  My favorite bar type cookie are magic cookie bars.  YUM!

5.  Coffee or Tea?

Coffee for sure.  I love lattes.  They are the best combination of low calorie and yummy taste.  In a world without calories, I would drink caramel macchiattos and white chocolate mochas.  YUMMY!

Top Ten Tuesday - Reasons to Start a Book Club

Tonight I am going to be spending my Tuesday evening with my girlfriends at Book Club.  We get together about every 6 weeks to 2 months and we take turns hosting and choosing the book to be discussed.

Here's the Top Ten reasons you should start a book club:


  1. It's a great way to "force" you to read more.  Let's face it....no one has tons of extra time.  Our lives are crazy these days and only those things with deadlines attached actually gets done.  Book Club meetings are a deadline to get those books read!
  2. There are GREAT "book club books" out there so it's easy to find a book to suggest.  Just go to your favorite book website and you will find a "book club" section.   Many sites even have suggested discussion questions.
  3. It's "scheduled" time out.  We all want to see our girlfriends more often but it gets pushed to the back burner so easily.  If you have a standing book club date in your calendar, it's easier to stick to it.
  4. There are appy's and sometimes....WINE.  All I have to say is...."YUM!"
  5. It's a great non-threatening way to meet new people.  Want to broaden your social circle? It's easier to invite someone to book club than to invite them over for dinner.  Since there is a whole group of people, you aren't responsible for carrying the whole conversation.
  6. You have an excuse to throw a theme party.  Now don't freak out...you don't HAVE to do this. It is cool, though, to have a theme party when you are reading a book.  Example: Have an Italian feast when reading Under the Tuscan Sun.
  7. You get to read great books - Over the last few years we have read AWESOME books such as: The Birth House, The Red Tent, etc.  
  8. You read books you would never pick.  Love 'em or hate 'em, it's great to get outside your reading "comfort zone".  No easier way to do that than to read books that someone else picked.
  9. You get to gossip with your friends.  What? You thought you only talked about books at Book Club?  NOT!
  10. Some Tips: Discuss with your friends and see who is interested.  Talk about what kinds of books everyone likes.  It's best to get an idea of interests before embarking on Book Club because if half of you want to read Classics and half want to read romance novels someone will be upset.
